Dining : UMAMI - Leading the food and beverage adventure at Vivanta by Taj – Guwahati is Umami – a specialty oriental restaurant that celebrates the choicest of Japanese and Chinese fare. Apart from the nuances of the orient what binds them together is a flavour we have come to know as Umami. Often considered as the 5th flavour, Umami is a loaned word from Japanese and means a 'pleasant savoury taste'. This was first scientifically identified in 1908 by Kikunae Ikeda, a professor of the Tokyo Imperial University after research on the palatability of the broth from Kombu seaweed. A private dining room is seamlessly woven with seating for 16 guests. Nothing less than the finest. Or less than the rare. Or less than superb. Paired with more of the extraordinary.
